cucumber salad (amounts are approximate and should be to taste)
1 cucumber, halved long ways and sliced thin
2 roma tomatoes, halved long ways and sliced thin
1/2 a small sweet onion
1 scant tablespoon honey or raw sugar
2 tablespoons oil
2 tablespoons apple cider vinegar (preferably bragg’s raw)
1 tablespoon water
salt and pepper
in a bowl mix the honey, oil, vinegar and water with a whisk until the honey is dissolved.  add veggies, salt and pepper and crunch on a cuke to check the seasoning - it should be tangy with a sweet edge - add more honey, vinegar, salt, etc. if desired.  allow the salad to marinate in the fridge for an hour or so stirring every 15 minutes or so and taste again, adjusting seasoning once more if necessary.  the veggies will give off some water, don’t be alarmed.
